Asim: A Study on Balance

A collection inspired by the Filipino fascination with sourness: acidity as balance and brightness. The menu moves through a range of souring agents: familiar, regional, and those less expected.

Not all sourness behaves the same — calamansi brightens, tamarind lingers, while fermentation deepens. Each expression is used with intention, allowing acidity to shape and steady the dish in its own way.

Asim is not sharpness, but clarity.
